Chicken broth or stock are great soup starters. You only need to add a few simple ingredients and you end up with a soup that fills your belly and warms your soul. Italian Wedding Soup can be ready in 45 minutes to an hour. To prepare in advance you need fresh burger meat to make mini meatballs and Escarole. If you can't find Escarole in your area you can use fresh Spinach.
Mom and I would spend quiet mornings together doing housework and errands in town. Even when I started school it was half day so I still got another year of time alone with mom, forever tying me to her apron strings. Peek inside. I am sure you will find something you like. What are Utica Greens Made Of?
Utica Greens is a Spicy Escarole dish made locally in the area of Utica, NY. It contains, Escarole, Hot Cherry Peppers and some of their juice, Prosciutto, Hot pepper flakes, Chicken broth, bread crumbs and Parmesan cheese.
It takes quite a bit of Escarole to make a dish of greens, because just like spinach and collards, you start out with a big pot full and end up with 1/3 or less of the pot full. Yes, they cook down considerably.
Once you add all of the other goodies they are worth all the trouble it is to make them. Should you live near Utica, it is just as easy to call and place and order at one of the many places that makes them. All have their own little twist on their recipe. You can view my recipe here.

Utica Greens are a local dish made with Escarole, meat, Hot Cherry Peppers, Parmesan cheese and bread crumbs. When I list meat as an ingredient it is because different places use different meats. Some use prosciutto, some use pepperoni, others use ham ect. You get the gest.
I have been a big fan of Utica Greens and often order them for my meal rather than an appetizer. Sometimes, I place an order to go so that I can use them in a recipe the next day. My experimentation with greens has let me to placing Utica Greens, a meat, and mozzarella inside a pizza dough and making a Utica Greens Roll (like a sausage roll). Sometimes, I use them to stuff a chicken breast before baking it. Or I top a baked chicken cutlet with greens and mozzarella and melt it in the oven.
Today it led me to a nice crispy Utica Greens Pizza. It was awesome if I do say so myself. I will definitely be making this again, again and again. I really liked how the Hot Capicola got crispy on the top of the pizza and the spice from the greens and Hot Capicola was a nice heat.
It is just my husband and I at home, so I tend to just get an extra order for takeout. If you do not live near Utica and want to make this you can google a recipe for Utica Greens. There are recipes all over the world wide web.

Soup for Your Belly
There is nothing better than a bowl of warm and
steamy soup on a dark, damp, rainy day.
Yes, you guessed it, it is raining here today. I snatched this recipe up from my
mother-in-law. It is an Italian soup
that uses penny pinching ingredients, which when mixed together make a most
flavorful soup. Be sure to have some
crusty Italian bread for sopping up some of the wonderful broth. This soup comes with an added bonus. As you can see it takes only a few
ingredients that couldn’t be easier to put together and cooked in about an
hour.
1 small onion chopped
2 cloves garlic minced
4 cans chicken broth
1 can cannelloni beans rinsed and drained
Dash nutmeg
Salt and Pepper to taste
Parmesan Cheese for topping

Greens & Beans Soup
1 large escarole cleaned and chopped
¼ lb. bacon or pancetta1 small onion chopped
2 cloves garlic minced
4 cans chicken broth
1 can cannelloni beans rinsed and drained
Dash nutmeg
Salt and Pepper to taste
Parmesan Cheese for topping
Fill a large bowl full of ice cold
water and leave it in the sink. Remove
outer leaves from escarole and discard them.
Chop the remainder of the escarole into bite size pieces. Place into bowl of water in the sink. Push down and stir escarole in the water
repeatedly to remove the and grit that gets stuck in the lower part of the
leaves. Drain and rinse a couple of
times. Set aside.
Chop bacon into ¼” pieces. Sauté in
large stock pan until bacon is almost crisp.
Add garlic, salt, pepper, nutmeg and onion sauté until translucent. Add escarole, chicken broth and beans. Bring to full boil for 15 minutes and then
turn down to a simmer for 30 minutes. Serve with crusty bread and sprinkle of Parmesan.
