Fresh Strawberry Pie

Strawberry season will soon be here in upstate New York.   Nothing better than a fresh strawberry pie.   I can fortunately bake through two seasons of fresh strawberries with my daughter living in South Carolina.
Their season runs through April and May and then of course I can come home and ours will start in June.  

We love fresh fruits in our house.  We often eat them for dessert after dinner or for a snack.   I have to admit summer fruits are my all time favorites.  We have many opportunities to go pick your own in several places within a 50 mile range of our home.   We start with strawberries and then move on to raspberries, black raspberries, blueberries and black berries.  

A fresh strawberry pie is a favorite in our home.   Big sweet juicy berries coated with a thin layer of glaze made from cornstarch and Jell-o and piled high in your favorite crust.



There are several flavorful crusts that work well with fresh strawberries.   I have made and tried all butter crust, half butter half Crisco crust, store bought, graham cracker, short bread and a crushed pretzel crust.  

There are also several types of glazes you can do as well.   You can purchase a glaze where you add water, heat and stir,  you can make the above Jell-o version or you can get a jar of seedless strawberry jam add a little water and heat on the stove, let cool and coat your berries.  

Here is my recipe with the Jell-o version of glaze.   Feel free to swap  out and try different crust recipes.

Tomato Pie

Tomato pie as we know it, is a room temperature delicacy made up of dough topped with a sweet sauce and grated parmesan cheese. It has been a local staple that many have tried to recreate at home.   

I have attempted to duplicate it myself several times.   Using pizza dough, using a focaccia dough but never had success. I have spent the last several days combing through old Italian cookbooks, the internet, face book, you tube and tictok to research tomato pie as we know it.  Finally I came across an Italian recipe that could have been Americanized to create Tomato Pie.   I then researched that recipe to find many in written or said in Italian and a few in English.   

This recipe is as close as it gets to the Americanized version of Tomato Pie. I made a double batch of dough.  The first attempt the dough was a little thin. I went sparingly with sauce and over the top with the parmesan.

The second attempt was much better.   Very close to our favorite version that we can purchase locally. My better half had the same judgements of the first attempt and the second attempt was "Husband Approved".

Nice crust topped with plenty of sauce.

Fudge Brownie Cheesecake Pie

What could be better than combining two delicious things into one pie?   Chocolate Fudge Brownie and Cheesecake swirled together in pie crust makes for a pleasing to eye and  delightful taste to the tastebuds. 




The mixture of the deep dark fudgy brownies and smooth soft cream cheese mix  makes for am attractive design in the pie.   It also makes for a rich creamy fudgy filling that pairs well with homemade whip cream or vanilla ice cream served on the side.   




This recipe does not disappoint.

Old Fashioned Double Chocolate Cream Pie

Craving something Chocolaty?
 
 
 
My favorite kind of pies are in the cream pie category. Chocolate is right up there on the top of the list followed closely by Banana and then Coconut. My mom always made hers from scratch including the pudding. I try to take short cuts when I can, this recipe from Jell-O is a close match to mom's without all the work.
